Organic Fresh Pea Hummus
Ingredients
500 g fresh peas, shelled the same day 5 tablespoons organic olive oil 5 tablespoons organic almond butter 1 clove organic garlic Juice of 1/2 organic lemon
zest of one organic lemon
Preparation
- Peel the garlic clove, cut it in half lengthwise, and remove the germ,
- Cook the peas for 5 minutes in the Vitaliseur, steamed, with a very small pinch of coarse sea salt from the mill,
- Rinse them under ice-cold water to stop the cooking process and preserve their beautiful green color,
- Put all the ingredients in a blender and blend until smooth,
- Season to taste with salt, pepper, and lemon zest,
- blender again,
- If the mixture is too thick, add a little lukewarm water,
- Pour into ramekins and chill
